Ooh this was comfort #vegan food at its best. Recipe used beluga lentils, red onions, mushroom, spinach and roast cauliflower along with Indian spices and coconut milk. Some mint and cucumber raita on the side using soya yoghurt. Easy on the tummy, less on the eye I’ll admit! Stick it on a stripy plate and it looks much more cheerful.
Recipe: Thinly sliced red onion and mushrooms (I also added frozen spinach) fried in a little coconut oil until softened then add two chopped garlic cloves and a wodge (technical term means however much you like!) of grated fresh ginger root + two tbsp curry paste (I used a makhani shop bought one but you could make your own) Keep on the heat for a few mins then add a can of beluga lentils and and around 1/2 can of coconut milk. Keep heating till soft but the lentils still have a little bite then add 1/2 juiced lemon and some fresh coriander. Bloody quick, bloody nice. These guys are PACKED full of protein and a great addition to a #vegan diet (or any diet). They are a complete protein (so the same as meat, fish and diary) and provide all the essential amino acids humans need to consume to survive. They’ve gained in popularity in the West but are a regular part of SE Asian diet. Edamame beans are the immature soybeans which can also be further processed into foods such as miso, soy sauce and tempeh. Also lovely amounts of folate so great for #pregnancy. Most kids absolutely love peeling and eating these too! Best eaten steamed with a sprinkling of salt.

I’m giving it a shot for a few reasons: to educate myself more on vegan foods and the options out there for my clients who chose to be vegan. I live in the vegan capital of the world (#bristol) a trend which is only growing in this vibrant food city! And perhaps also as my own personal challenge. I don’t eat meat, but I do rely heavily on many dairy products (pictured) in my diet so I wanted to see how difficult it is to cut these out of my diet. Cutting dairy is something I have on occasion advised clients (for differing reasons, many times related to skin conditions such as eczema) so again it’s good to challenge myself on actually how easy or difficult it is to remove. I LOVE resolutions, I never stick to them all but I love the thought of something to work towards.
Keep them simple, realistic and not too pressurised and you might just get there this decade...If your goal is weight loss make sure the end target is achievable and healthy. If you want health to be your priority, then seriously consider contacting a Nutritional Therapist (such as me!) And please please please don’t rely on diet pills, detox teas or faddy diets.
