COWBOYS

As much as I absolutely 💛 the lowly but mighty lentil, try as I might to pass this love onto my small people.👧👧👶

Why do I rate #lentils? Quite simply they are superfoods. 🔝Somehow they became known as ‘hippy food’ (as though this was a slur!) in the 70’s presumably because they should form a main staple of a #vegetarian diet. But these bad boys are bloody good for every type of diet (except Paleo, Keto etc. but that’s a whole other post...) .

Lentils are AMAZING sources of
#fibre and #protein - higher than the trendier and much more expensive #quinoa! 💰Also they smash most other healthy grains in terms of folate and iron. Both micronutrients we all need to keep an eye on ESPECIALLY in certain people.

So how do I get lentils in my children? I’ve tried a range of things: vegetarian Bolognese (didn’t go down well, but it’s delicious, knocks the socks off the beef version IMO!) Indian daal - sometimes they like this but theres a lot of persuasion with chutney and popadoms. And then hiding them in baked goods. (Surprisingly easy and delicious filler in cakes, chef google can accommodate you with a recipe) But sometimes I do want them to know what they are eating and appreciate it for what it is.🙏🏻

Then one day I had the brain wave 💡of trying to up the nutritional stakes of the parental staple: baked beans by adding some lentils. I told the kids these are what cowboys ate and so and behold cowboy beans were born! 🐎🌵If I use the french stuff (Puy lentils) this gets upgraded to pirate beans - equally cool apparently. ⛵️

Poaching pears for Friday night supper dessert. Served with vanilla creme anglaise and cinammon and a smidge of black pepper.

Poached pears by the way are basically one of the best things ever. I challenge anyone to eat pear, straight up poached or pureed and not be absolutely gobsmacked by how delicious this underrated fruit is. And pear tart - GET OUT OF TOWN! An apple a day? Pah! Mines a pear... 🍐🍐🍐🍐🍐🍐🍐🍐🍐🍐🍐🍐🍐🍐

BLACK GARLIC

I feel slightly wary about posting this as it looks a little like I’m holding something else 💩😬 Head out of gutter please, it’s not! This, my foodie friends, is aged black garlic. Oh we do like the black stuff it’s oh-so-special and knocks the socks off the white garlic!

It is way way way 👆 higher in allicin (the active component in #garlic which gives it all its famous health benefits) and also has a lot higher antioxidant status than normal garlic - around TWICE as much 👏 It can help aid digestion (due to more polyphenols, flavanoids and anthocyanins = good-for-you chemicals in food to those who haven’t studied nutrition!) So potentially beneficial for those who suffer from digestive issues such as #IBS and on a #lowfodmap diet.

From a culinary perspective it’s sweeter, so adds a whole new caramelly dimension to cooking and very easy to enjoy this ‘raw’ without reeking for days or taking the skin off your tongue....So, that is black garlic. A wonderful little taste explosion, nutritious and delicious.

Warm fat butter beans, spicy rocket salad, lip smackingly good sundried tomatoes, salty pesto and ohmygod-my-favourite artichokes.

We added a few extra greens (leek and asparagus) but this was bloody good, thank you
@mindfulchefuk for providing a delightful and rather healthy alternative to takeaways!
