Easy like Sunday mornings... 😌coconut porridge with flaxseed and frozen raspberries and a spoonful of almond butter this morning. Oats are pretty much always an excellent suggestion for breakfast, being fibre + slow release energy. But this breakfast can be a little heavy on the carbs (despite them being complex carbohydrates) especially when you add fruit or sweetener. Peanut butter noodles

Easy pea-sey peanut butter noodles - I make these for my children and they always go down well. The sauce is tamari/soy sauce, high oleic peanut butter, maple syrup, sesame oil, ginger and garlic. For the grown up version I added in some more adult veg and substituted egg noodles for vegan friendly brown rice soba ones. Friday night jackfruit taco’s

We’re not a stranger to jackfruit it’s become a bit of a staple in our diet since I went veggie. It comes mostly in tins rather than fresh in this country, grown in SE Asia. It’s becoming more and more popular so my local greengrocer now sells it. It’s texture is great for #vegan and #vegetarian as it’s a similar consistency to pulled pork or chicken. It’s dead easy to cook with. It lends itself really well to spicy flavours so we often cook it with chipotle paste. Here it’s served on romaine lettuce with onions, red pepper and sweet corn salsa with loads of lime. Happy weekend all...

Outdid myself making midweek lasagne (that pretty much never happens) And not one but two 👊 Vegan white sauce is actually really easy, replacing butter with olive oil and using nut milk instead of cows milk. I used oatmilk which is less flavoursome than coconut or almond. Can you guess which one has cheese on it and which is dairy free?

Tomato and lentil soup

Big fan of the soups here - sooo many studies into why soup is one of the healthiest foods you can eat (depends on what you put in it of course!) and is great especially earlier in the day as it’s been proven to slow gastric emptying and keep us fuller for longer. Very easy to digest so also great for those with IBS (again watching what your ingredients are) For those trying vegan food for January (or longer) soup seems like an absolute no brainer in this weather

Most soups need vegetables as a base and it’s pretty easy to omit meat, fish eggs and dairy - in fact I never add any of those ingredients anyway! Today’s soup was lentils which have become an even bigger staple in my diet than they were earlier. I actually think I love them more if that’s possible??!

Raw slaw 😍 Anyone who knows me knows I eat a lot of this stuff. My husband is the absolute master of making it and we eat raw cabbage salad in some form, most evenings. We normally use yoghurt, olive oil and AC vinegar as a dressing so wanted a way to make this vegan as I'm trying veganuary.

The soya yoghurt didn’t work so well (husband distinctly unimpressed) so I was keen to see how the vegan mayonnaise was going to stand the taste test 😬. Verdict 👍 I wouldn’t say it’s any better for you nutritionally speaking but if you’re a vegan, doing veganuary or can’t eat eggs this is definitely a pretty good alternative. Hellman’s - jobs a good’un.

Apple and spinach smoothie

I made this one up quickly for brekkie today as I'm trying to move away from always have a banana in smoothies. We are creatures of habits and its so easy to get into eating the same meals repetitively. One apple, ceylon (cinnamon (1tsp), oats (1/2 cup) chia seeds (1 tbsp), 1 portion spinach, almond milk (1 cup) and flaxseed (1 tbsp).

Really satisfying with some protein from the addition of spinach, oats and chia, sweet enough with the apple and cinnamon and creamy with the oats and nut milk + kept me full up till lunch. Flaxseed is a great addition to a vegans diet as they are a good source of ALA, plant based omega 3.
