Loving this heatwave! This is frozen chia pudding made with coconut milk, chia seeds, a splash of vanilla essence and some bee pollen. Put it in the freezer and it makes a SMASHING alternative to icecream - and high in #protein and #fibre to boot.
Bee pollen is obviously optional and not many people have this in the store cupboard but as a nutritionist I like introducing people to new ingredients. It’s super high in protein and B Vitamins which are crucial to our energy requirements. Six things you should know about seeds: 1. They are mega nutritious. Basically they are the start-up of any plant. So in essence are jam-packed full of the good stuff. 🌻 2. This includes fibre, vitamins, minerals and antioxidants.👌 3. People (myself included) bang on about GOOD FATS. Seeds are a good source of those GOOD FATS. 4. ____________ This lovely #wildflower is a staple in the British #hedgerow. It grows wild pretty much everywhere rural and is absolutely gorgeous. We are surrounded by it near where we are staying in Somerset. But did you know you can eat this little beauty? It’s in the same family as carrots and #parsley. ____________ It has purported #medicinal uses and was used in traditional medicine across Europe and Asia such as helping kidney stones, #cough , water retention, headaches and as an #antiinflammatory BUT there is very little scientific research to back this up. However it is apparently a wonderful mosquito repellant if rubbed on the skin. ____________ It doesn’t taste very good (though apparently good in salads or with potatoes) so I should think there is some truth in the anti-mosquito element. Not to be confused with the incredibly poisonous hemlock which should NOT be eaten.
