Christmassy cinnamon and chocolate orange fudge recipe

Six more sleeps till Christmas!

The internet is filled with healthy christmas puddings or mince pie recipes but I wanted to make something fun with the children that they could enjoy too. This is so simple and requires no baking so can be done last minute, with little preparation or clearing up (other than lots of licking of fingers and bowls as demonstrated in the video)

This treat contains lots of lovely essential fats through the coconut oil, protein in the nut butter, iron, calcium and magnesium in the cacao and zinc in the pumpkin seed butter to name but a few health benefits. It sure beats those in traditional fudge! Plus it's fairly low GL using only maple syrup to sweeten and with the additional of lovely cinnamon which reduces the glycaemic load.

Ingredients:

1/2 cup raw cacao powder
1/2 cup melted coconut oil
1/4 cup almond butter
1/4 cup pumpkin seed butter
1/4 cup maple syrup
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
grated rind of one small orange or 2 tablespoons of orange juice
optional: 1/8 tsp himalayan salt (I exclude this for children but its personal preferance)

Directions:
Mix all the ingredients together (making sure the coconut oil has cooled enough) then add to a loaf tin lined with baking paper. Put in the fridge for 1-3 hours. It should be firm to the touch but lovely and soft in the middle, like fudge. Cut into christmas shapes or small squares, distribute as gifts or eat on the spot!
